Organic spring garlic is full flavoured garlic that is deliberately harvested before it has reached maturity. Its milder, sweeter flavour is similar to leeks or spring onions. It does not keep as a mature bulb would, so store in the fridge and use within a week. It can be cooked in all the ways you would a mature garlic, it'll just have a lighter, brighter taste.
