Arso is a toasted flour imported exclusively to Lello from Puglia. It adds a nutty aroma & a more toothsome bite to the pasta than its regular semolina cousin. Handmade in Melbourne from 80% Australian ingredients. Not organic but made from quality ingredients with love.

Head chef Leo (whose childhood nickname was Lello) is Melbourne born and bred but has passionate Italian roots.
