Green garlic is full flavoured garlic that is deliberately harvested before it has reached full maturity. Spring garlic can be used anywhere you would use mature garlic, the only difference being all the plant is used similar to leeks or shallots. Please note that Spring Garlic does have a use by date and does not store or last like normal bulb garlic. Refrigerate once you open. Spring garlic is fabulous in stir fry’s, soups, salads, dressings, pasta, sprinkled on pizza and even in omelettes. Use it raw or cooked.
